Apple and Plum Crumble

The perfect cosy dessert with seasonal autumn fruit, and just the right amount of spice. Serve with double cream, custard, or ice cream!

Serves 6-8

Ingredients

Fruit filling:

  • 4 large plums

  • 4 apples (firm variety such as Granny Smith, Pink Lady or Breaburn)

  • 50g soft light brown sugar

  • 1 tsp ground cinnamon

  • 1/2 tsp ground ginger

  • Zest of 1/2 lemon

Crumble Topping:

  • 175g plain flour

  • 130g unsalted butter (cold)

  • 50g rolled oats

  • 75g soft light brown sugar

  • 1/2 tsp ground cinnamon


Method

  1. Peel and core the apples, and cut into chunks, and pit the plums and cut those into similar sized chunks too.

  2. Place in a saucepan, and over a medium heat, add the brown sugar, spiced and lemon zest, with 2 tbsp water.

  3. Stir thoroughly and let it cook for around 5-10 minutes until the apples are slightly soft.

  4. Tip into a baking dish and leave while you make the crumble, and pre-heat the oven to 180 C (fan).

  5. Rub the flour and butter together with your hands until it resembles breadcrumbs, then mix in the rolled oats, brown sugar and cinnamon, mixing together until it clumps.

  6. Crumble evenly over the top of the fruit, and bake for 25-30 minutes until the crumble is golden and the fruit is bubbling around the edges!

  7. Serve with double cream, custard or ice cream!
